Sterlet sturgeon ( Acipenser ruthenus) is one of the smaller species of sturgeon and is now very rare. Sterlet Sturgeon produces Caviar rather similar to Sevruga in look and flavor. The small golden eggs of the STERLET STURGEON were once commonly ranked, along with Beluga, as the most desired caviar in the world. It is grain to grain and malossol (less salted). It is slightly pasteurized.
